So many marvelous things today. Let’s get right to it:
Marvelous is… putting that fridge to use! This weekend I was able to create some incredible and odd dishes based on what I had on hand. The greatest success the sliced salad below, here’s the recipe:
Daikon Detox Salad
1 14″ Daikon
2 large carrots
1/2 large onion
2 large stalks of celery
1/2 cup Seasoned Rice Vinegar
2 tbs Sesame Oil
Directions: Slice the vegetables paper-thin and transfer to bowl. Next combine the dressing in a small bowl and pour over vegetables, ensuring everything’s coated. Cover the bowl, move it to the fridge and let the vegetables marinate in the dressing for 30 minutes before serving. Enjoy!
Marvelous is… Bulletproof Coffee, and JAVAPRO aka buzzing with caffeine. Why the need for caffeine? WELL, this week I did 30 hours of my personal training certification! It was a LOT of information, but I was so excited to be surrounded by people who are equally enthusiastic about helping people, learning about the body and becoming our best selves.
